Instructions for proper wood cutting and charcuterie board care:
Wood cutting boards and charcuterie boards should be washed by hand using a standard dish detergent and warm water with a soft towel. Do not wash in a dishwasher! These boards should be refinished with a coat of food-grade mineral oil to preserve the wood approximately every 10 uses or as often as you see fit depending on your use of the board. If desired, you may use a fine grit sandpaper (like 400 grit) to lightly sand the board before applying the finish. I recommend using Walrus Cutting Board Oil and Wax, WATCO Clear Food-Grade Butcher Block Oil, or Howard Cutting Board Oil.
If at any time you wish to refinish your cutting board to remove cut marks you can sand it before refinishing with an oil. For shallow cuts, the board can be sanded using 220 grit sandpaper on a flat block for even sanding, going with the grain of the wood (most likely lengthwise on the board). For deeper cuts, the board should be sanded starting with 100 grit sandpaper on a flat block, going with the grain of the wood. Once marks are no longer visible, use 220 grit sandpaper in this same manner until the board appears and feels smooth. Remove all dust and apply a coat of food-safe wood cutting board finish with a dust-free cloth. For best results, apply a second coat after a light sanding with 220 or higher grit sandpaper (I recommend 400 grit for smoothest results). Some oils such as the Howard Cutting Board Oil recommend applying a third coat. Follow the instructions of the oil of your choice.
